A Fusion of Culinary Cultures and Architectural Elegance in the Heart of Morelia City

FMA. have recently completed their latest hospitality project in Morelia, Mexico – Josafat Zalapa. This innovative restaurant helmed by Chef Josafat Zalapa, takes diners on a gastronomic journey like no other, inspired by the Japanese term “Omakase,” which means “I trust you” or “the chef’s selection.” With its exclusive dining experience, Josafat Zalapa invites patrons to actively engage in the culinary artistry as they witness the creation of their dishes.

The Josafat Zalapa experience begins even before entering the restaurant, as visitors are greeted by a historic building that exudes charm and character. A corridor and gallery lead guests to a cloister adorned with a captivating collection of artworks along its perimeter. At the heart of this space, a sculptural piece featuring dried vegetation serves as a poignant reminder of the passage of time within this storied building.

The architectural layout of Josafat Zalapa is a harmonious blend of the past and present. Two rooms flank a picturesque courtyard, enhanced by Baroque-style architectural elements. The main dining area features a sculptural bar surrounded by 20 designer chairs, while a second bar is discreetly tucked away in another corner. Upon entering, patrons are captivated by the centerpiece of the project: an elongated bar where they can gather around Chef Josafat Zalapa, eagerly anticipating the culinary spectacle that unfolds before them.

Intricately designed interiors strike a delicate balance between historical architecture and contemporary elements. This design approach creates an introspective, elegant, and refined atmosphere that complements the dining experience. The bar concept at Josafat Zalapa underscores the importance of the dishes prepared by the chef, while subtle indirect lighting along the floor’s edge illuminates the limestone walls, highlighting their historical significance and architectural beauty.

The design philosophy behind Josafat Zalapa was to respect the architectural integrity of the building while tastefully enhancing the interiors. The result is a timeless ambiance that seamlessly integrates with the historical layers of the structure. Material selection remains essential, featuring wooden floors and pigmented cement coatings on the walls.

Particular emphasis was placed on lighting design and furniture integration during the project. Each element was custom-designed, from the linear lamps that accompany the bar to the chairs where diners indulge in their culinary delights.
